Blues tend to store fat, which tastes awful. Hard to be a squeeler channel cat fried crispy though! He's a few tricks for fishy catfish.
Make sure you remove all "yellow" meat from the shoulders. Split the catfish fillet along the lateral line and remove the dark meat. Cut the remaining flesh into finger sized pieces cutting across the grain. Toss the fingers in yellow mustard until coated evenly and lightly. Then toss them in your breader of choice and deep fry in hot oil. The fish won't taste like mustard but the strong flavor will be gone.

Tehy have the same diet in both sources, so I think for us it is the quality of water. I especially love eating fried catfish because of its crispy texture and delicious taste.
